Oven baked pork spare ribs with baked beans
Ingredients
- Rack of pork spare ribs
- 1 tsp smoked paprika
- ½ tsp dried onion flakes
- ½ tsp garlic flakes
- ½ tsp crushed black pepper corns
- ½ tsp ground cumin
- Pinch cayenne pepper
- 2 tbsp light brown sugar
- Salt
- Sticky ribs bbq sauce (Discovery)
- 1 can cannellini beans
- 1 chopped onion
- 2 chopped celery sticks
- Fajita seasoning (Discovery)
- 1 tbsp dark brown sugar
- 2 jacket potatoes
Method
Prepare a rub with the smoked paprika, onion flakes, garlic flakes, pepper corns, cumin, cayenne, brown sugar and salt. Mix well together and rub all over the pork ribs. Massage the rub into the meat. Allow the meat to rest for 15 minutes until it starts to sweat. Next, wrap the ribs into a silver foil pocket and bake for 2 ½ hours in a moderately hot oven temp 130 °c. Take the ribs out of the foil and brush all over with the barbecue sauce. Return to a hotter oven temp 180°c for a few minutes. Brush again with the sauce and repeat the same process for 3 times until ribs are glazed and sticky. To prepare the beans simply cook the onion and celery sticks in a spoon of oil, mix in the fajita spice and stir well. Add the beans, sticky rib sauce and dark brown sugar. Bring to the boil and simmer for 10 minutes until thick. Slice the ribs and serve with the beans and jacket potatoes.
