Orange and cardamom crème Brule
Serves: 2
Ingredients
- 250ml cream
- 75ml full fat milk
- 1 vanilla pod
- 4 egg yolks
- 3 tbsp sugar
- 1 tbsp orange liqueur
- Zest of an orange
- 3 cardamom pods
Method
Heat Oven to 140`c. Place the cream, milk, orange zest ,vanilla seeds and cardamom into a pan and heat to boiling point. Cover and leave to infuse for 10 minutes. Whisk the eggs and the sugar together until pale and thick. Add the vanilla cream onto the mixture and stir well. Pour into two ramekins. Place the ramekins into a dish half filled with water and bake for 20 minutes. Leave to cool completely before caramelizing the top with sugar using a blow torch .
