One-Pan Hummus Crusted Chicken with Butter Bean Puree

Ingredients
- 2 large chicken breasts (boneless, skinless)
- 120g hummus (Camel brand)
- 1 tbsp olive oil
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp oregano
- 2 tsp za’atar
- 15ml lemon juice
- 1 pkt mixed salad leaves
For the butterbean puree
- 200g butter beans in oil (Camel brand)
- 2 garlic cloves
- Salt and pepper.

Method
Preheat oven to 190 degrees. Grease a baking dish with butter or oil. Set aside. Mix together salt, pepper, paprika, garlic powder, onion powder, oregano and za’atar. Place chicken in a bowl and drizzle with olive oil, turn to coat each breast with oil.
Evenly space the chicken breasts in a baking dish. Sprinkle each chicken breast evenly with spice mixture (just less than 1 tsp per breast). Spread 2 tablespoons hummus on each chicken breast. Drizzle the top of the hummus with lemon juice. Bake for 25- 30 minutes.
Prepare the butterbean puree by combining the butterbeans (and the oil), salt, pepper and garlic. Blitz until it reaches the consistency of runny mashed potatoes.
Serve the chicken immediately over the butterbean puree and a generous serving of salad leaves.
