Oat balls

Ingredients
- 250g oat Flakes
- 50g cocoa powder
- 100g unsalted cashew nuts
- 100g unsalted almonds
- 200g dates, pitted
- 50g raisins or currants
- 50g cranberries
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1 shot Vermouth
- Approximately 3/4 cup skimmed milk
- Honey to taste (optional)
Optional Variations
- Coconut, shredded for rolling
- Pistachios, crushed for rolling
- Chocolate, melted for coating
Method
In a food processor combine oats, cocoa powder, cinnamon and ginger. Add the nuts and fruits and mix well. You can chop all nuts and fruits before adding and just mix in with the oat mixture. Alternatively, you can use a food processor and add everything as wholes and let it crush everything for you. Add the vermouth for taste and slowly add the milk until it forms a firm mixture. Mixture should resemble the texture of a dough, however it should be very moist and sticky.
Form into small balls and roll into coconut or crushed pistachios until ball is fully coated. Repeat process until you have used up all the mixture. Refrigerate for a few hours, drizzle with honey and serve. Alternatively, melt chocolate and dip each ball into chocolate, refrigerate again and serve.
