Neonati patties with sundried tomato and olive dressing
Serves:
Ingredients
For the patties
- ½ kg drained neonati
- 3 fresh tomatoes deseeded and chopped
- 2 tbsp chopped mint
- 2 tbsp chopped parsley
- ½ tbsp garlic
- 1small onion finely chopped
- 4 tbsp chopped black olives
- 4 eggs
- 200g breadcrumbs
- Zest of a lemon
For the dressing
- 50g black olives
- 50g sun-dried tomatoes
- 2 tbsp chopped mint
- 2 tbsp parsley
- 2 tbsp mayonnaise
- Salt and pepper
Method
Mix all the ingredients thoroughly and let to rest for 30 minutes. In a non stick pan heat some oil and butter, fry a tablespoon full of the mixture from both sides until golden brown. For the dressing blend all the ingredients in a food processor.
