Mozzarella salad with Parma ham, peaches and maple syrup drizzle

Ingredients
For the salad
- 1 large handful rucola leaves
- 1 large ball mozzarella (GALBANI)
- 6 slices Parma ham (GALBANI)
- 2 peaches, stoned and thickly sliced
- 1 tbsp pine nuts, toasted
- Fresh seasoning
For the maple syrup drizzle
- 2 tbsp extra virgin olive oil (PREGO)
- 1 tbsp maple syrup
- Juice of ½ lemon
Method
This is an extremely easy recipe to prepare. Arrange the rucola leaves onto 2 serving plates and place 3 pieces of Parma ham on top each plate. Rip up the mozzarella into small pieces and arrange in between. Place on the sliced peaches, followed by the toasted pine nuts. Season the salad well with salt and pepper. Whisk together the dressing ingredients in a small bowl and pour over the mozzarella salad with Parma ham and peach slices.
