Mixed fruit cobbler with pouring custard

Ingredients

For the fruit filling

  • 3 apples, peeled, cored and sliced
  • 50g caster sugar
  • 30g butter
  • Finely grated zest of a lemon
  • Juice ½ lemon
  • 1 tbsp corn flour
  • 1 tsp ground cinnamon
  • 1 tin summer fruits, drained (Tesco)
  • 1 tin pears, drained and sliced(Tesco)

For the cobbler

  • 200g plain flour
  • 2 tsp baking powder
  • Good pinch salt
  • 80g melted butter
  • 40g caster sugar
  • 1 tsp vanilla
  • 150ml buttermilk (Schardinger)

For the cinnamon sugar

  • 2 tbsp caster sugar
  • 2 tbsp ground cinnamon

Method

To make the filling, melt the butter and sugar together in a pan and cook the sliced apples for 5 minutes to soften. Remove off the heat and add in the lemon juice and zest, sliced pears, cinnamon, corn flour and 4 tbsp of the fruit juices. Transfer into a greased oven dish then spoon over the summer fruits. Next, make the cobbler topping , mix together the flour, baking powder, salt and sugar and mix in the melted, vanilla and enough buttermilk to make a soft dough. Roll into rough balls and decoratively place on top of the fruit. Mix together the remaining sugar and cinnamon for the topping and sprinkle over the pastry. Bake in the oven at 200`c for 20 minutes or until the cobbler biscuit is cooked through.

  • 50g ‘caster sugar’
  • 30g butir
  • qoxra ta’ lumija maħkuk fin
  • meraq ta’ nofs lumija
  • mgħarfa ‘cornflour’
  • kuċċarina kannella
  • bott frott tas-sajf (Tesco)
  • bott lanġas (Tesco)

Għall-cobbler

  • 200g dqiq ‘plain’
  • 2 kuċċarini ‘baking powder’
  • niskata melħ
  • 80g butir imdewweb
  • 40g ‘caster sugar’
  • kuċċarina vanilla
  • 150ml ‘buttermilk’

Għaz-zokkor tal-kannella

  • 2 mgħaref ‘caster sugar’
  • 2 mgħaref kannella

Method

Biex tagħmel il-mili, dewweb il-butir u z-zokkor flimkien f’taġen u sajjar it-tuffieħ imqatta’ għal 5 minuti biex trattab. Neħħi minn fuq in-nar u żid il-meraq u l-qoxra tal-lumija, il-lanġas imqatta’, il-kannella, il-cornflour u 4 mgħaref meraq tal-frott. Ittrasferixxi ġo dixx u ferra’ fuqu l-frott tal-bott. Sussegwentement, agħmel il-wiċċ tal-cobbler billi tħallat flimkien id-dqiq, baking powder, il-melħ u z-zokkor kif ukoll biżżejjed buttermilk u vanilla sakemm tagħmel għaġina ratba. Irrombla f’forrma ta’ blalen u dekorattivament poġġi fuq il-wiċċ tal-frott. Ħallat flimkien il-bqija taz-zokkor u l-kannella u xerred fuq l-għaġina. Sajjar fil-forn f’200°C għal 20 minuta jew sakemm il-gallettini fuq il-cobbler ikunu saru.
