Mixed berry and mascarpone trifles

Ingredients

  • 2 egg yolks
  • 55g caster sugar
  • 60ml Frangelico liqueur
  • 250g mascarpone cheese
  • Plain sponge
  • 300g mixed berries
  • Fresh mint leaves for garnish

 

Method

Whisk the egg yolks and sugar until light and fluffy, add 1 tablespoon of Frangelico and whisk. Add the mascarpone and use a metal spoon to gently fold until just combined. Brush the sponge with the remaining liquor and make four layers of sponge per portion. In a glass layer sponge, berries, mascarpone cream and on top finish with the cream and some fresh mint for garnish.
