Mexican crème caramel with tequila-orange strawberry salad

Serves: 6

Ingredients

For the crème` caramel

  • 400ml evaporated milk
  • 400ml sweetened condensed milk
  • 5 eggs
  • 4 tbsp sugar
  • 200g cream cheese
  • 1 tsp vanilla essence

You will also need

  • Fresh strawberries, washed and hulled
  • 1 cup orange juice
  • Fresh lime juice
  • Mint leaves
  • 1 red chilli sliced
  • Cracked black pepper
  • 2 tots Tequila

Method

Cook the sugar with a few drops of water to a caramel stage and pour into 6 oven proof ramekins. Put all the remaining ingredients in a liquidiser and whizz until smooth. Pass through a sieve and pour on the set caramel. Cover with foil and cook in a bain-marie for approximately 35 minutes in a moderate oven at 170`c. Meanwhile, prepare the salad by mixing all the ingredients together.
