Mediterranean octopus stew

Ingredients

  • 1 octopus
  • 1 carrot, diced
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 200ml fish stock
  • 100ml tomato polpa
  • 50g olives
  • 1 lemon
  • Fresh herbs

 

Method

Wash the octopus well and dice into small pieces. Squeeze over the lemon and allow to marinate for minutes. Meanwhile, cook the finely chopped onions and garlic before adding in the octopus and carrots. Stir well then add the tomato polpa, olives, herbs and the fish stock and allow to simmer gently for 25 minutes.
