Mark and Louise doneo`s herbed lamb patties with Mediterranean rucola and mozzarella salad

Ingredients

For the patties

  • 2 tbsp butter
  • 2 cloves garlic, crushed
  • 2 finely chopped spring onions
  • 750g minced lamb
  • 1 tbsp finely chopped fresh thyme
  • 1 tbsp finely chopped rosemary
  • 1 tbsp finely chopped fresh parsley
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp tomato paste
  • 3 tbsp breadcrumbs

For the salad

  • 2 handfuls rucola leaves
  • 15 basil leaves
  • 100g sliced sun-dried tomatoes (CAMEL BRAND)
  • 20 mini mozzarella balls (GALBANI)
  • Parmesan shavings (GALBANI)
  • 2 tbsp garlic and herb dressing (HELLMANNS)
  • 1 packet garlic croutons (TIPIAK)

 

Method

Start this recipe by frying together the garlic and spring onions in the butter till soft. Place in a medium sized bowl with the remaining ingredients and mix together well till all the ingredients are well incorporated. Mould the mixture into small patties and cook on a hot barbeque on both sides. Meanwhile, prepare the salad by mixing all the ingredients together in a salad bowl and serve with the delicious lamb patties.
