Ingredients
For the fruit
- 450g dried mixed fruit (Lamb brand)
- 110g candied peel (Lamb brand)
- 110g red cherries (Lamb brand)
- Zest of 1 orange and lemon
- Juice 1 orange
- 1 heaped tsp ground cinnamon
- 1 heaped tsp mixed spice
- ½ tsp ground nutmeg
You will also need
- 225g margarine (Stork)
- 225g brown sugar (Lamb brand)
- 5 eggs (Le Naturelle)
- 3 tbsp black treacle
- 135g self-raising flour (Lamb brand)
- 135g plain flour (Lamb brand)
- 80g whole blanched almonds (Lamb brand)

Method
Start this recipe by preparing the fruit the day before by mixing all the ingredients together. Cover with cling film and allow the fruit to soak up all the juices. The next day, beat together the sugar and margarine till light. Beat in the eggs, one by one adding in a tbsp. of flour with the last 2. Fold in the remaining flours and blanched almonds and turn into a 20cm cake tin double lined with non-stick paper. Bake in the oven at 150°C for 2-2 ½ hours, or until a skewer inserted comes out clean. Allow to cool down completely before soaking with brandy or rum. Wrap up tightly in cling film and soak with extra alcohol every week before decorating.
