Christmas almond pastini di mandorla

Ingredients

  • 500g pure ground almonds (Good Earth)
  • 400g icing sugar 
  • Finely grated zest 2 lemons
  • 2 tsp vanilla extract
  • 70-90g egg whites (Le Naturelle)
  • You will also need food colourings, pistachios, almonds, cocoa, cherries and extra icing sugar to decorate

Method

Place the icing sugar and ground almonds into a food processor with the lemon zest and blitz together for 10-15 seconds. Add in the vanilla and enough egg whites to form a stiff almond paste.  Divide into pieces, adding in colour, cocoa and nuts to change flavours. Cut into small pieces, roll into ing sugar or nuts and place onto baking sheets lined with non-stick paper. Bake in the oven at 180°C for 10-12 minutes. DO NOT allow to brown or over cook as they will dry out and become hard once cooled.
