Maltese pumpkin soup

Ingredients
- 1 tbsp butter
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 1½ tsp grated nutmeg
- 2 tsp sugar (Optional)
- 1½ kg pumpkin, grated
- 4 carrots, finely diced
- 4 potatoes, peeled and finely diced
- 4 stalks celery
- 1½ litres vegetable stock
- Salt and pepper
- Some finely chopped parsley to garnish
- Grated semi-dry Gozo cheeslets to serve
Method
Heat the oil and butter in a pot and gently fry the onion with the nutmeg and sugar. When the onion is soft, mix in the remaining vegetables. Cook for a few minutes and then pour in enough vegetable stock to cover the ingredients. Season, bring to the boil and simmer for 30 minutes. Cool slightly, remove the celery and process the soup to a creamy consistency. Serve garnished with the parsley and the grated gbejniet.

Method
Sahhan iz-zejt u l-butir f’borma. Zid il-basla, iz-zokkor u n-noce moscata. Sajjar sakemm il-basla tirtab. Zid il-kumplament tal-haxix u sajjar ghal ftit minuti. Hawwad kultant. Zid il-brodu vegetali biex tghatti l-ingredjenti u hawwar bil-melh u bzar. Sajjar is-soppa ghal madwar nofs siegha. Nizzel minn fuq in-nar, nehhi l-karfus u halli tibred ftit. Ipprocessa is-soppa sakemm issir kremuza. Servi bi ftit tursin fil-wicc u mal-gbejniet mahkukin.
