Light cake with strawberries

Method

Preheat the oven to 17°C. Grease a 10 inch springform cake tin with extra margarine, line with parchment paper and grease again. 

Beat the margarine and sugar together in a mixing bowl until pale and fluffy, blend in the egg, milk and vanilla, next stir in the flour, baking powder and pinch of salt. Beat lightly until mixture is smooth. 

Pour into the greased cake pan. Hull and cut the strawberries in halves and lay over the cake batter, cut side down. Sprinkle lightly with caster sugar and bake for approximately 45 minutes. 

Allow the cake to cool down completely. Dust with icing sugar before serving.
