Lettuce cups with chilli smoked prawns and avocado

Ingredients

For the prawns
16 Large tiger prawns, deveined
1 Fresh chilli, finely chopped
Juice and zest 2 limes
1 tsp Smoked paprika
1 tbsp Olive oil (Borges)
Salt to taste
You will also need
1 Large avocado, diced
2 Large tomatoes, deseeded and finely diced
2 tbsp Olive oil (Borges)
1 tbsp White wine vinegar
Juice ½ Lime
Salt and pepper to taste
3 tbsp Garlic mayonnaise (Hellmann)
2 tbsp Sweet chilli sauce
Fresh coriander leaves to decorate
1 Small gem lettuce

Method

Start by marinating the prawns with the fresh chilli, juice and zest of 2 limes, smoked paprika, olive oil and season to taste with salt. Allow to marinate for 30 minutes. Meanwhile, make a salsa by mixing together the chopped avocado, tomatoes, olive oil, vinegar, juice ½ lime, torn coriander leaves and season well with salt and pepper. Lastly, mix together the mayonnaise and sweet chilli sauce as a dressing. To put the dish together, separate the gem lettuce leaves into cups and BBQ or grill the prawns. Fill the lettuce cup with the avocado salsa, top with the chilli smoked prawns and drizzle over the chilli mayo sauce. Decorate the top with fresh coriander leaves
