Lemon curd and raspberry puff pastry squares

Method
Unroll the pastry sheets and cut into 10cm squares. Cut a v- shape into 2 opposite ends. Brush lightly with the beaten egg and fold the side over, sticking down. Fill half with lemon curd and half with raspberry jam. Top with the defrosted raspberries and sprinkle over some flaked almonds. Place onto a baking tray lined with non-stick paper and bake in the oven for 25-30 minutes or until golden and crispy. Dust with icing sugar before serving.
