Lemon cake

Ingredients

  • 220ml milk
  • 250g flour
  • 300g sugar
  • 120g lard or unsalted butter
  • 2 medium eggs
  • Vanilla essence
  • 2 lemons
  • 1 tbsp baking powder

Method

In a bowl mix sugar and lard until blended smoothly. Add the eggs and cream. Grate the lemon rind and add to the mixture together with the vanilla. Divide the flour in three equal amounts, and the milk in two equal amounts. Fold in flour first than milk, and repeat, finish off with the flour. In a cup, squeeze the lemons, add the baking soda, the mix will start frothing, fold in straight away and bake for 20-30 minutes in pre-heated oven at 180`c.
