Lemon and mint couscous cakes with sour cream

Ingredients
- 2 cups cooked tabbouleh couscous (Tipiak)
- 3 eggs (Coccodi)
- Zest of a lemon
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh mint
- 4 spring onions, finely chopped
- 150g shredded mozzarella (Emborg)
- 3-4 tbsp self-raising flour
- 1 tbsp harissa paste
- 1 tsp cumin
- 1 tsp cinnamon
- Salt and pepper to taste
- You will also need sour cream and lemon wedges for serving.
Method
Start this recipe by mixing together the couscous, lemon zest, herbs and spices, spring onions, mozzarella, flour and harissa and season with salt and pepper. Next, crack in the eggs and mix together to form a paste. Form into patties and fry on both sides in a pan with a little oil. Serve with the sour cream and lemon wedges on the side.
