Leek and salmon roulade set on vodka and melon juice

Serves: 6

Ingredients

  • 12 pieces smoked salmon
  • 150g mascarpone cheese
  • 1 leek chopped
  • Fresh seasoning
  • 1 orange, cut into segments
  • 2 shots vodka
  • 1 melon, cleaned from any seeds
  • 6 fresh basil leaves
  • Cracked fresh pepper

 

Method

In a bowl mix the mascarpone cheese, leeks, fresh seasoning, orange segments and set on the side. On a clean work top open the cellophane to around 30cm wide by 40cm long and overlap the smoked salmon on top. Once ready get the mascarpone mix and with a knife spread over the salmon and finish with cracked fresh pepper. Start rolling the salmon to a tight cylinder shape. Freeze for three hours to set. In a liquidiser put the melon, vodka and basil and blitz well.
