Layered bulgur salad in glasses

Ingredients

  • 1 pkt Bulgur wheat (Tipiak)
  • 1 small cucumber
  • Fresh mint and parsley
  • Handful crushed walnuts
  • 1 can sweet corn
  • 1 spoon hot chilli sauce
  • 2 avocados
  • 100g cherry tomatoes
  • Fresh basil
  • 100g yellow cherry tomatoes
  • 1 large carrot, peeled and grated
  • 1 can chickpeas
  • 1 spoon honey
  • 200g Feta cheese
  • 1 lemon
  • Extra virgin olive oil
  • Baby cress 
  • Salt and pepper

Method

Prepare each layer in separate containers;

Bulgur: cook the bulgur wheat according to packet instructions. 

Season the bulgur wheat with salt, pepper, walnuts, chopped cucumber, chopped mint and parsley, drizzle lightly with extra virgin olive oil.

Avocadoes; peel, core and chop into neat dice, marinade with extra virgin olive oil, salt, pepper, zest and juice of halve a lemon.  

Cherry tomatoes; cut in quarters, season with salt and pepper, basil leaves and extra virgin olive oil.

Chickpeas; drain the chickpeas and spread on a roasting tray, drizzle with honey and chilli flakes, roast for 10 minutes. Allow cooling.

Feta cheese, cut into dice, season with cracked pepper, extra virgin olive oil, lemon juice and parsley. 

Serving; Alternate layer of each ingredient in serving glasses, garnish with cresses.
