Pulled chicken Waldorf open sandwiches

Ingredients

  • 4 pieces boneless chicken thighs
  • 1 onion peeled and sliced
  • 2 garlic cloves
  • Bay leaves
  • 1 teaspoon ground cumin
  • 2 spoons smoked pepper BBQ dressing (Kuhne)
  • 1 Green apple
  • 2 celery stalks
  • Handful of white grapes
  • 2 spoons Crème frais
  • 1 lime
  • 4 thick slices of sourdough bread
  • Extra virgin olive oil
  • Handful of walnuts

Method

Skin off the chicken thighs and season with salt, pepper and cumin, transfer onto an ovenproof dish together with the onion, garlic and bay leaves. Spoon over the Smoked pepper BBQ sauce and mix till coated. Add in a glass of water and cook at 150°C for 40 minutes. Remove from heat, discard the bay leaves and flake the chicken meat with 2 forks combining everything with the onion and sauce. 

Prepare the salad core the apple and cut into fine slices, add the chopped celery, sliced grapes and bind with crème frais and lime juice. 

Brush the bread slices with olive oil and toast or grill till crunchy.

Serve the toasted bread with the Waldorf salad and top up with pulled chicken and crushed walnuts.
