Lampuki flat breads

Ingredients

  • 2 lampuki fillets
  • 1 tbsp olive oil
  • 2 lemons
  • 2 tbsp dark soy sauce
  • 2 tsp smoked paprika
  • ¼ cucumber
  • 1 tomato
  • Fresh salad leaves
  • 2 tsp capers, chopped (Camel)
  • 2 tbsp chopped Kalamata olives (Camel)
  • 2 tbsp mayonnaise
  • 1 tbsp chopped parsley
  • 2 flat breads
  • 1 tub ready made hummus (Camel)

Method

Marinade the Lampuki fillets with olive oil, juice of ½ lemon and soy sauce for at least 30 minutes.

When ready, cook the lampuki fillets in a hot non-stick pan on one side till golden brown. Sprinkle with salt, pepper and smoked paprika, flip over and cook the other side to brown. Meanwhile, cut the cucumber and tomato into neat dice, mix together with the olives, chopped parsley, salt, pepper, fresh salad leaves and 1 tbsp olive oil. In another bowl, mix together the chopped capers, mayonnaise, lemon zest. Warm up the flat breads till soft, spread with the hummus and place on a serving plate. Dress up with salad leaves, top up with the cucumber salad and cooked fish.

Drizzle with the caper dressing and serve with extra lemon wedges.

  • 2 imgħaref mayonnaise
  • żejt taż-żebbuġa
  • barmil żgħir hummus

Method

Immarina l-fletti tal-lampuki fiż-żejt taż-żebbuġa, meraq ta’ nofs lumija u dark soy sauce għal mill-inqas 30 minuta. Meta tkun lesta, sajjar il-fletti tal-lampuki fuq naħa waħda sakemm jieħdu l-kulur kannella dehbi ġo taġen sħun li ma jeħilx. Roxx bil-melħ, bżar u paprika affumikata, aqleb u sajjar min-naħa l-oħra. Sadanittant, qatta’ l-ħjar u t-tadam f’dadi puliti, ħawwad flimkien maż-żebbuġ, tursin imqatta’, melħ, bżar, weraq tal-insalata friska u mgħarfa żejt taż-żebbuġa. Fi skutella oħra, ħawwad flimkien il-kappar imqatta’, il-mayonnaise u l-qoxra tal-lumi. Saħħan il-ħobż ċatt sakemm ikun artab, ferrex bil-hummus u poġġih fuq platt biex isservi. Poġġi l-weraq tal-insalata fuq il-platt, imbagħad żid l-insalata tal-ħjar u l-ħut imsajjar. Idlek bit-taħlita tal-kappar u servi ma’ biċċiet żejda tal-lumi.
