King prawns with garlic and Parmesan breadcrumbs

Ingredients

  • 8 large King prawns, peeled and tails on
  • 2 Eggs, beaten
  • Well-seasoned flour
  • Garlic mayonnaise to serve

For the breadcrumbs

  • 2 large handfuls fresh bread crumbs
  • 3 tbsp chopped parsley
  • Zest & juice of a lemon
  • 2 tbsp grated Parmesan cheese
  • 4 cloves chopped Garlic
  • Good glug olive oil

Method

Start by preparing the king prawns. Take a knife and run it down the back of the prawns, removing the vein. To make the crumb mixture, mix together the breadcrumbs, parsley, lemon juice and zest, grated parmesan and chopped garlic. Place the seasoned flour in a bowl and the beaten eggs into another bowl. You are now ready to start coating the prawns. One by one, dip the prawns into the seasoned flour, coating well. Next, dip them into the beaten eggs, and then finally into the breadcrumb mixture. Place the prawns on a greased baking tray and drizzle all over with the olive oil. Bake the prawns in the middle shelf of the oven, at 180°C for about 10 minutes, or until the prawns are golden brown. Serve the prawns with the garlic mayonnaise on the side.

Method

Ibda pprepara l-gambli. Għaddi n-naħa ta’ wara tagħhom b’sikkina biex tneħħilhom il-vina. Biex tagħmel it-taħlita tal-frak tal-ħobż, ħallat flimkien il-frak tal-ħobż, it-tursin, il-meraq u l-qoxra maħkuka tal-lumija, il-ġobon parmeġġan maħkuk u t-tewm imqatta’. Poġġi d-dqiq imħawwar fi skutella u l-bajd imħabbat fi skutella oħra. Issa tista’ tibda tiksi l-gambli bil-panura. Itfagħhom fid-dqiq u iksihom tajjeb. Imbagħad itfagħhom fil-bajd u fl-aħħar nett għaddihom mit-taħlita tal-frak tal-ħobż. Poġġi l-gambli f’dixx miksi biż-żejt u kompli ferrex aktar żejt taż-żebbuġa fuqhom. Aħmihom fl-ixkaffa tan-nofs tal-forn f’temperatura ta’ 180oC għal madwar 10 minuti jew sakemm jiħmaru. Servi l-gambli bil-mayonnaise tat-tewm f’ġenb.
