Crunchy chicken fillets with zucchini and carrot slaw and cream cheese dip

Ingredients

For the chicken

  • 2 small chicken breasts, skinned
  • Salt and pepper
  • 3 tbsp flour
  • 1 tbsp chopped thyme
  • 2 beaten eggs
  • 1 cup cornflakes, crushed
  • 1 tbsp olive oil

For the slaw

  • 1 zucchini, cut into spaghetti
  • 1 carrot, cut into spaghetti
  • 1 tbsp chopped parsley
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar
  • 2 tbsp chopped walnuts
  • 1 tsp whole grain mustard
  • Salt and pepper

For the dip

  • 2 tbsp mayonnaise
  • 2 tbsp cream cheese with herbs
  • 1 tsp grated lemon zest
  • Juice ½ lemon
  • 1 clove garlic, chopped
  • 1 tsp fresh thyme leaves

Method

Start this recipe by cutting the chicken fillets into thick fingers. Mix the flour with the fresh thyme and season well with salt and pepper. Cover the chicken pieces liberally with the flour and then dip into the beaten egg. Cover in the crushed cornflakes, pressing the pieces on well. Place onto a baking sheet, drizzle with the oil and bake in the oven for 10-15 minutes. Meanwhile, prepare the dipping sauce. Place all of the ingredients together in a processor and blitz together. Place in the fridge to chill. For the slaw, blanche the carrot and zucchini spaghetti for a minute then immediately run under cold water. In a bowl, mix together the oil, vinegar, mustard and season with salt and pepper. Mix in the zucchini, carrots and walnuts. To serve, place the crunchy chicken fingers onto 2 boards and serve both the slaw and dip in separate bowls on the side.
