Jam lamington doughnuts

Ingredients

For the cake
70g caster sugar
70g margarine (Stork)
1 tsp vanilla extract
1 egg (Coccodi)
95g plain flour
½ tsp baking powder
Pinch salt
70-80ml milk (Benna)

You will also need
6 tbsp shredded coconut
1 packet raspberry jelly
2 tbsp raspberry jam (Mackays)

Method

Beat together the sugar and butter until soft and light. Mix in the vanilla, beaten egg, followed by the flour, baking powder, and salt. Finally mix in the milk but do not over mix. Place into a piping bag and pipe into your silicone mini doughnut molds, making sure to also fill over the hole. Bake in the oven at 200`c for 12-15 minutes. When ready, allow to cool down completely. Carefully dip into the cooled jelly and immediately coat in the coconut. Place the jam into a piping bag and fill the hold.
