Iced Easter cookies

Ingredients
- 180g margarine (Stork)
- 150g caster sugar
- 1 large egg, beaten
- 2 tsp vanilla extract
- Few drops almond extract
- 280g plain flour
- ¾ tsp baking powder
- Pinch salt
- You will also need melted chocolate, jam and royal icing to decorate
Method
Place the margarine and sugar in a bowl and beat together till light. Next beat in the egg and essence. Finally sift together the flour, baking powder and salt and fold into the mixture to form a soft dough. Chill for 2 hours then roll out on a floured surface, cutter using fancy Easter cutters and place spaced apart onto lined baking sheets. Bake in the oven at 180°C for 15-20 minutes or until pale and golden. Remove from the oven and allow to cool down completely before decorating.

Method
Poġġi l-marġerina u z-zokkor fi skutella u ħawwad flimkien. Imbagħad żid u ħabbat il-bajda u l-essenza. Fl-aħħar għarbel id-dqiq, it-trab tal-ħami u l-melħ flimkien u żid mat-taħlita biex tifforma għaġina ratba. Kessaħ għal sagħtejn, imbagħad irrombla fuq wiċċ bid-dqiq, bl-użu ta’ cutters tal-Għid aqta’ f’forom differenti u poġġihom imbegħdin minn xulxin fuq folji tal-ħami miksija. Sajjar fil-forn f’temperatura ta’ 180°C għal 15-20 minuta jew sakemm jieħdu kulur dehbi. Neħħi mill-forn u ħallihom jiksħu kompletament qabel ma żżejjen.
