Artichoke and lemon pasta with burrata

Ingredients

1 jar artichoke hearts, drained (Camel brand)
Finely grated zest 1 small lemon
Few fresh thyme sprigs
Good pinch chilli flakes
Salt and pepper to taste
250g orecchiette pasta (Lamb brand)
1 tbsp butter
100g walnut halves (Lamb brand)
Few fresh basil leaves
2 tbsp grated Parmesan
2 burrata

Method

Place the artichokes, lemon zest, thyme leaves, chilli flakes in a bowl, season with salt and pepper and transfer to a baking dish. Roast for about 15-20 minutes. Meanwhile, cook the orecchiette pasta in a pan of salted hot water. Place 1 tbsp butter in a large pan and brown the walnuts and butter for a few minutes.  Add in the basil leaves, grated Parmesan, roasted artichokes, cooked pasta and mix everything together. Serve in a large pasta bowl with the burrata split on top and extra basil leaves.
