Home-made pork sausages

Ingredients
- 500g minced pork
- 50ml red wine
- 1 tsp fennel seeds
- 1 chilli, finely chopped
- 1 tsp finely chopped rosemary
- 1 tsp finely chopped parsley
- Fresh seasoning
Method
In a medium sized bowl, mix the sausage ingredients together well. Take a handful of meat and roll it into a sausage shape. Wrap up tightly in a piece of foil, securing the ends well like a toffee shape. Repeat with the remaining sausage filling. Bring a large pan of water to the boil and poach the sausages for 2 to 3 minutes or until they pop up to the surface of the water. The poaching will ensure that the sausages keep their shape. Remove the sausages from the water and allow to cool before opening. Grill or shallow fry the sausages as desired before serving. You should be able to make 8 sausages from this mixture.
