Grilled peach and burrata bruschetta

Ingredients

  • 2 thick slices Maltese bread
  • 1 clove garlic, peeled
  • Drizzle olive oil (Borges)
  • 1 burrata (Zanetti)
  • 2 peaches, sliced and grilled
  • 1 packet serrano ham (Casadamont
  • Few rocket leaves for decorating
  • Good pinch dried chili flakes

Method

Drizzle the thickly cut bread slices with olive oil, season with salt and pepper and toast on a griddle pan. When ready, rub the top with the clove of garlic, cut the burrata in half and spread over each slice. Top with the grilled peaches and serrano ham, top with rocket leaves, chili flakes and a good drizzle of olive oil.
