Grilled chicken breast with rocket salad and spicy hummus dip.

Ingredients

  • 2 chicken breasts
  • 1 leek
  • 12 asparagus stems
  • 4 tbsp croutons (Tipiak)
  • Handful rocket leaves
  • 200g chickpeas
  • 3 tsp sesame oil
  • 3 tsp sweet chilli sauce
  • 1 tbsp chopped parsley
  • 3 cloves chopped garlic
  • 8 Vitabake crackers (DEVON)

Method

Cut the breast in 4 flat pieces and grill with some olive oil and seasoning. Cut the leek and blanched asparagus in long strips (julienne) and toss in butter, remove from heat and in another bowl toss with the rocket leaves and croutons. Serve the salad in between two pieces of grilled chicken. Using a blender, blend together the chickpeas, sweet chilli, parsley and garlic until a smooth paste. Serve with the Vita bake crackers.
