Grilled Calamari salad with barley salad

Ingredients

  • 100g barley, rinsed well
  • 2 gloves garlic
  • 1 handful baby spinach leaves
  • 10 green olives (Fos Lora)
  • 1 tbsp. capers
  • 3 tbsp. olive oil
  • 4 small calamari
  • 1 tbsp. lemon pepper
  • ½ small chili, finely chopped
  • 1 lemon
  • 8 cherry tomatoes
  • Small bunch mint leaves
  • 3 tbsp. yogurt (Kolios)
  • Salt and pepper to season

Method

Start this recipe by cooking the barley in boiling water till soft. Rinse and allow to cool down. Meanwhile blitz the garlic, baby spinach, olives and capers together with the olive oil to make a pesto. Mix the cooked barley with the pesto, tomatoes, mint leaves and yoghurt and season with salt and pepper. Next, clean the calamari and cut slits into the flesh on one side. Coat with the chili and lemon pepper, lemon juice and zest and quickly grill in a preheated pan on both sides for just 2 minutes. Serve the barley salad with the grilled calamari on top.

  • 3 imgħaref żejt taż-żebbuġa

  • 8 tadamiet ċirasa

Method

Ibda din ir-riċetta billi ssajjar ix-xgħir f’ilma jagħli sakemm jirtab. Laħlaħ u ħallih jiksaħ. Sadanittant ħawwad it-tewm, l-ispinaċi, iż-żebbuġ u l-kappar flimkien maż-żejt taż-żebbuġa biex tagħmel pesto. Ħallat ix-xgħir imsajjar mal-pesto, mat-tadam, il-weraq tan-nagħniegħ u l-jogurt u ħawwar bil-melħ u l-bżar. Sussegwentement, naddaf il-klamari u aqta’ qasmiet fil-laħam fuq naħa waħda. Iksi bil-lemon pepper  u l-bżar pikkanti, bil-meraq u l-qoxra tal-lumija u aqli malajr f’taġen imsaħħan minn qabel miż-żewġ naħat għal 2 minuti biss. Servi l-insalata tax-xgħir bil-klamari ggriljati fil-wiċċ.
