Grilled flat bread with Muhammara (red pepper and walnut dip)

Ingredients

For the Muhammara

  • 2 red peppers, char-roasted and peeled
  • 2 garlic cloves
  • 100g walnuts (Lamb brand)
  • 6 slices brown bread
  • Juice of halve a lemon
  • 1 tbsp. pomegranate molasses
  • 1 tsp ground cumin
  • Red chili flakes to taste
  • Extra virgin olive oil

For the flat bread

  • 350 g self-raising flour (Lamb  brand)
  • 1 tsp salt
  • 1 tsp baking powder (Lamb brand)
  • 350g natural yogurt
  • 1 tbsp. chopped rosemary

Method

For the Muhammara, blitz all the ingredients together  with enough extra virgin olive oil into a smooth dip and chill. For the flat bread, knead all the ingredients together to form a soft dough. Turn onto a lightly dusted floured surface and divide into 12 pieces. Roll and flatten slightly with the palm of your hand, use the rolling pin and roll into flat bread about 3 mm flat. Score the centre of flat bread using a sharp knife and grill for approximately 1 minute on each side on a griddle pan heated with a little oil.

Method

Għall-Muhammara, ħawwad l-ingredjenti kollha flimkien ma’ biżżejjed żejt taż-żebbuġa sakemm tagħmel dip u kessħu. Għall-flat bread, għaqqad l-ingredjenti kollha flimkien biex tifforma għaġina ratba. Iftaħ fuq wiċċ bid-dqiq u aqsam fi 12-il biċċa. Irrombla u ċċattja ftit bil-pala ta’ jdejk, uża l-lembuba u rrombla f’ħobż ċatt ta’ madwar 3mm ħxuna. Taqqab iċ-ċentru tal-ħobż ċatt billi tuża sikkina taqta’ u ggrilja għal madwar minuta fuq kull naħa fuq pjanċa tal-gradilja msaħħna bi ftit żejt.
