Gluten-free tortilla quiche

Method
Cut the tortilla into discs that fit mini muffin trays, push and press into the moulds. Chop the gammon, cheese and spring onions and divide into the flans. Beat together the eggs, cream and parsley, pour into the flans and bake at 175⁰c for approximately 15 minutes until the quiche sets.
