Florentine slice

Ingredients

  • 400g mixed dried fruit (Good Earth)
  • 125g flaked almonds
  • 100g chopped glace cherries
  • 100g chopped dried apricots
  • 3 heaped tbsp plain flour (St Georges Brand)
  • 150g butter
  • 150g honey
  • 1 egg
  • 200g dark chocolate (Icam)

Method

Grease and line an 18cm x 28cm baking tray with baking paper. Mix the dried fruits, almonds, cherries and apricots in a bowl together with the flour. Melt the butter and honey over low heat, cook for 3 to 4 minutes, stirring continuously. Pour over the fruit mixture and stir in the beaten egg until well combined. Transfer to mixture to the baking dish and flatten with spoon into a smooth surface. Bake in a pre-heated oven, 175°c for approximately 30 minutes. Remove from the oven, allow setting in the tray. Spread with the melted chocolate and chill for a couple of hours before slicing.
