Fig and pear almond tart with vanilla mascarpone

Ingredients

For the base
  • 1 packet ginger biscuits (Tesco)
  • 50g butter
For the filling
  • 250g ground almonds
  • 200g caster sugar
  • Finely grated zest of a lemon
  • 3 eggs
  • 10 fried figs, stalks removed (Tesco)
  • 1 pear, peeled, cored and quartered
  • You will also need
  • 200g mascarpone cheese
  • Few drops vanilla extract (Tesco)

Method

Start this recipe by crushing the biscuits fine in a processor and stir in the butter. Line the base of a 8inch spring form tin with baking paper. Press the biscuits into the base and sides. For the filling, mix together all the ingredients and beat together for 1 minute. Pour into the prepared base and even out. Press in the pear quarters and the figs. Bake in the oven at 180`c for 25-30 minutes. Meanwhile, mix together the mascarpone cheese and vanilla. When cooked, remove the tart from the oven and allow to cool down before serving with a dollop of the mascarpone cream.

  • 50g butir

Għall-mili

  • 250g ta’ lewż mitħun
  • 200g zokkor
  • qoxra ta’ lumija mqatta’ fin
  • 3 bajdiet
  • 10 tin moqlija, mingħajr zokk
  • lanġasa, imqaxxra

Ikollok bżonn ukoll

  • 200g ġobon mascarpone
  • ftit qtar estratt tal-vanilla

Method

Ibda din ir-riċetta billi tfarrak il-gallettini fi processorr u ħawwad mal-butir. Iksi l-bażi ta’ landa ta’ 8 pulzieri bil-karta tal-ħami. Agħfas il-gallettini fil-qiegħ u fil-ġnub. Għall-mili, ħawwad flimkien l-ingredjenti kollha u ħabbat flimkien għal minuta. Ferra fil-bażi ppreparata u anke barra. Agħfas fih il-kwarti tal-lanġas u t-tin. Aħmi fil-forn f’temperatura ta’ 180°C għal 25 sa 30 minuta. Sadanittant, ħawwad il-ġobon mascarpone u l-vanilla. Meta ssir, neħħi t-tart mill-forn u ħalliha tiksaħ qabel ma sservi ma’ mal-krema mascarpone.
