Farmhouse minestrone

Serves: 2

Ingredients

  • 1 stick of celery
  • 1 onion, peeled and finely chopped
  • 700ml chicken stock
  • 1 carrot, peeled, diced
  • 1 zucchini, diced
  • 1 tomato
  • 1 tbsp soaked red lentils
  • 1 tbsp soaked fava beans
  • 5 French beans, cleaned and cut in half
  • 1 tbsp tomato paste
  • 1 potato

Method

In large bowl, soak the beans and lentils overnight with enough water to cover by 2 inches. Drain beans and lentils. In a saucepan, combine beans and lentils with enough water to cover by 2 inches; simmer uncovered until tender, 45 minutes to 1 hour, adding water to keep beans and lentils barely covered. Add salt; simmer 5 minutes more. In heavy soup pot, cook onion; stirring, until soft. Add carrot, celery and garlic stirring for 4 minutes. Peel and cut potato into 3/4-inch dice. Add potato, zucchini and green beans to pot; cook, stirring, 4 minutes. Add green beans, tomato paste and broth; simmer, covered for an hour. Drain beans, but reserve liquid. Puree half the beans with 1 cup reserved liquid. Stir puree and remaining beans into soup; simmer uncovered 15 minutes. Season with salt and pepper.
