Coconut cake

Ingredients
- 250g plain flour
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- Pinch salt
- 100g desiccated coconut (Good Earth)
- 160g coconut oil (Good Earth)
- 300g plant based milk (Alpro)
- 1 tsp vanilla extract
- 250g caster sugar
- To decorate
- 100g icing sugar
- 2-3 tbsp plant based milk (Alpro)
- 50g flaked toasted coconut

Method
Line a 9 inch loose bottomed cake tin with nonstick paper. In a bowl, mix together the coconut oil, oat milk, vanilla and caster sugar. Add in the remaining cake ingredients and whisk together till smooth. Pour into the prepared cake tin and bake in the oven at 180°C and bake for 40-50 minutes. Allow to cool then mix together the icing sugar with the milk to make a glaze, pour over the cake and decorate with toasted flaked coconut.
