Chocolate risotto with chilli pineapple salsa and salted caramel

Ingredients
Ingredients for risotto
- 1 cup risotto rice
- 2 cups water
- 1 cup milk
- Vanilla pod
- 1 tot dark rum
- 100g caster sugar (Lamb Brand)
- Zest and juice of 1 orange
- 1 cinnamon stick
- 2 spoons butter (President)
- 50ml fresh cream (Benna)
- 200g good quality dark chocolate
Ingredients for salsa
- 1 small can pineapple cubes in syrup
- Fresh red chilli
- Chopped fresh mint
Ingredients for Caramel
- Caster sugar (Lamb Brand)
- Water
- Fine sea salt
Method
Toast the rice in the butter over high heat, scrape the vanilla pod and stir in together with the cinnamon stick. Gradually start pouring in the water and the milk until absorbed and rice is cooked. Take off the heat remove the vanilla bean and the cinnamon stick, beat in the remaining ingredients. Chop the pine apple, enough red chilli and mint, bring with enough syrup.
