Chicken, pumpkin and multigrain pie
Ingredients
- 4 slices multigrain bread (Golden Harvest)
- 100g kidney beans
- 250g chicken breast
- 150g pumpkin diced
- 2 eggs, beaten
- 1 onion diced
- 4 cloves garlic chopped
- 2tsp chopped fresh sage
- 30g chopped walnuts
- 1 aubergine
- 4 tbsp grated cheese
- Bunch rocket
Method
Using a ceramic dish, place the bread at the bottom of the dish and bake until bread is well dried without burning. In little olive oil using a preheated pan seal well the chicken breast cut in thin strips than add the onions, pumpkin, garlic and toss until the vegetables are softened. Next, add the beans, sage and walnuts and mix well, remove from heat and add the eggs , mix well and pour the mixture on the bread. Slice the aubergine in thin slices lengthwise and place on top, sprinkle with cheese and bake.
