Chicken curry

Ingredients

  • 4 tbsp olive oil
  • 2 onions, chopped
  • 4 garlic cloves, finely chopped
  • 5 tbsp medium curry
  • 2 bay leaves
  • 3 chicken breasts
  • 5 large tomatoes, peeled and chopped
  • 1 apple, peeled and diced
  • 60g raisins
  • Juice of a lemon
  • Zest of 1 lemon
  • 2 tbsp wine vinegar
  • 2 tbsp sugar
  • Salt
  • Fresh coriander to garnish
  • Poppadoms to serve (PATAKS)
  • 450g basmati rice
  • 1 tbsp turmeric

Method

Heat the oil in a pot and add the onions. Cook over a medium flame until they start to brown. Stir occasionally. Meanwhile cut the chicken into bite-sized pieces. Add the garlic and bay leaves to the onions and cook for 1 minute. Mix in the curry and cook for 1 minute and then mix in the chicken and season with salt. Turn the heat to high and cook the chicken for 3 minutes stirring often. Mix in the tomatoes cook for 1 minute and then mix in the remaining ingredients. Bring to the boil, lower the heat and then simmer the sauce for 40 minutes. Meanwhile cook the rice in boiling salted water to which the turmeric has been added. Drain and place on a large dish. Pour over the sauce, garnish with chopped coriander and serve with the poppadums.

Zid it-tewm u r-rand mal-basal u kompli sajjar ghal minuta. Zid il-curry, sajjar ghal minuta filwaqt li thawwad umbaghad zid it-tigieg u hawwar bil-melh. Gholli n-nar u sajjar ghal 3 minuti filwaqt li thawwad spiss. Zid it-tadam, sajjar ghal minuta umbaghad zid il-kumplament tal-ingredjenti.. Meta t-tahlita tiftah taghli baxxi n-nar u halli t-tahlita ssir bil-mod ghal 40 minuta. Sadanittant ghalli r-ross f’ilma bil-melh u t-turmeric. Saffi r-ross u ifirxu f’dixx kbir. Ferragh z-zalza fuq ir-ross u zejjen bil-coriander imqatta. Servi mal-poppadums.
