Broccoli and stilton cheese soup
Serves:

Ingredients
- 1 broccoli
- 1 onion, chopped
- 1 clove garlic, chopped
- 2 medium sized potatoes, peeled and diced
- 200ml vegetable stock
- 50g stilton cheese
Method
Preheat a deep pan with some olive oil and shallow fry the onion ,garlic and the potatoes for 5 minutes. Next, gradually add in the vegetable stock and bring to boil, lower the heat and simmer for 10 minutes. Finally add in the broccoli florets, bring to boil and cook until the broccoli is soft. Blitz together with the stilton cheese and serve immediately.
