Spicy turkey and sweetcorn soup
Serves:
Ingredients
- 150g salted butter
- 1.5 ltrs water
- 200g cooked turkey breast
- 2 leek
- 2 potatoes
- 2 chicken cubes (Star)
- 1 onion
- 5 cloves garlic
- 200ml coconut milk
- 200g sweetcorn
- 1 tbs red curry paste
- 2 slices baguette for croute
Method
Although cooked already fry the turkey breast with curry paste and butter, once well browned add leeks,onions, garlic ,bouillion and fry until softened. Add water and potato bring to the boil and simmer for 30 minutes. Remove turkey and blend well, chop turkey and add again to soup together with sweetcorn and coconut milk. Simmer for 5 more minutes, adjust with salt and pepper and serve.
