Black pepper and honey beef stir-fry with broccoli and cashew nuts

Ingredients

  • For the beef
  • 400g beef knuckle, thinly sliced and cut into strips
  • 3 tbsp. dark soy sauce (Tiger tiger)
  • 3 tbsp. oyster sauce (Tiger tiger)
  • 2 tsp minced garlic (Tiger tiger)
  • 2 tbsp. freshly crushed black peppercorns
  • 3 tbsp. runny honey
  • You will also need
  • 1 large onion, sliced
  • 2 tbsp. avocado oil (Strand Palace Agency)
  • 150g broccoli, cut into small florets
  • 200ml beef stock
  • 1 tsp corn flour (Lamb brand)
  • 25g toasted cashew nuts (Lamb brand)
  • 2 spring onions, finely sliced
  • You will also need cooked basmati rice for serving (Felak)

Method

Start this recipe by mixing all the beef ingredients together and allow to marinate for 1 hour. When ready, heat up 1 tbsp. avocado oil and quickly stir-fry the beef only (keep the liquids aside) for 2 minutes then remove from the pan. Heat up the remaining 1 tbsp. avocado oil and quickly stir-fry the sliced onion and broccoli florets for 3 minutes to soften. Add the beef back in, including the reserved juices. Mix the corn flour with the beef stock, add to the pan and continue to stir-fry for 2 minutes to cook the beef and thicken the sauce. Serve immediately sprinkled with the cashew nuts and sliced spring onions.
