Black Berry Pork fillet with thyme and a lime infused couscous

Ingredients

  • 400g pork fillet
  • 8 black berries
  • 1 tbsp. honey
  • ½ glass red wine
  • ½ glass beef stock
  • 1 tbsp. thyme leaves
  • 80g couscous (Tipiak)
  • 1 chicory bulb
  • 1 glass vegetable stock
  • 2 limes, quartered

Method

Seal the whole pork fillet from all sides and finish in the oven for 20 minutes at 170°C. Using the same pan with the pork juices, add the honey and caramelize, Add in the berries, pour in the wine, thyme, beef stock and simmer. Cut the chicory in quarters and braise in hot vegetable stock. Cook the couscous in 200ml water together with the quartered limes and keep covered. Cut the pork and simmer for 2 minutes in the sauce, then serve on the couscous with the chicory.
