Beer battered chicken fillets

Ingredients

  • 130g plain flour
  • ¼ tsp baking powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp garlic granules
  • ¼ tsp smoked paprika
  • 1 can of chilled beer
  • 1 bag chicken fillets, cut into smaller pieces (Dewfresh)
  • You will also need vegetable oil for deep frying and sweet chili sauce for serving

Method

In a medium-size bowl combine the flour, baking powder, salt, pepper, garlic and smoked paprika together. Add about 250ml of ice-cold beer. Ideally, place beer in a freezer for about 15mins. This will create a crispier batter. Mix until you get to the consistency of light pancake batter. Fix accordingly with extra flour/beer ratio. Do not make a thick batter. Heat the frying oil to approx. 170°c. Dip chicken pieces into batter, drip off excess and drop gently into the oil. Cook into small batches until golden brown stirring occasionally to avoid sticking. This should take around 5-6 minutes. Serve immediately with sweet chili sauce whilst still hot.

Fletti tat-tiġieġ bil-panura tal-birra

  • kikkra dqiq
  • kwart ta’ kuċċarina trab tal-ħami
  • nofs kuċċarina melħ
  • kwart ta’ kuċċarina bżar iswed mitħun
  • nofs kuċċarina granuli tat-tewm
  • kwart ta’ kuċċarina paprika affumikata
  • bott birra
  • zalza sweet chilli biex isservi
  • litru żejt għall-qali

Method

Fi skutella ta’ daqs medju, ħawwad flimkien id-dqiq, it-trab tal-ħami, il-melħ, il-bżar, it-tewm u l-paprika affumikata. Żid madwar 250ml birra kiesħa. Idealment, tpoġġi minn qabel il-birra fil-friża għal madwar 15-il minuta. Permezz ta’ hekk, tkun tista’ toħloq panura tqarmeċ. Ħallat sakemm tasal għall-konsistenza ta’ taħlita ħafifa bħal tal-pancake. Jekk ikun hemm bżonn żid id-dqiq jew il-birra. Tagħmilx taħlita ħoxna. Saħħan iż-żejt tal-qali għal madwar 170°c. Għaddas biċċiet tat-tiġieġ fil-panura, qattar iż-żejjed tal-panura u poġġi bil-mod fiż-żejt, sabiex ma ttajjarx żejt fuqek. Sajjar fi gruppi żgħar sakemm isiru kannella dehbi waqt li tħawwad kultant biex tevita li jeħlu. Dan għandu jieħu madwar 5-6 minuti. Servi immedjatament biz-zalza tal-isweet chili waqt li jkunu għadhom sħan.
