Beef fillet surf `n` turf

Ingredients
- 2 beef fillet steaks
- 4 king prawns
- Few rocket leaves
- 1 clove garlic, crushed
- Few springs fresh thyme and rosemary
- 1 tbsp butter
- 1 tomato, peeled, deseeded and chopped
- 1 measure brandy
- Prawn bisque and rucola leaves for serving
Method
Cut the steaks in 2 pieces and season well with salt and pepper. Heat a tablespoon of olive oil and butter in a pan together with the crushed garlic and herbs. Add the beef steaks to the pan and seal in the hot pan. Continue to cook the beef for about 4 minutes on each side to cook. Alter the cooking time to your preferred choice. Remove the cooked beef from the pan and add the prawns, cooking for just 2 minutes. Quickly flame the prawns with the brandy and remove from the pan. Add the chopped tomatoes to the same pan and finish off with the bisque. Immediately serve the steak and the prawns on a bed of rocket leaves and dress with the delicious sauce.
