Beef burgers with grilled vegetables and cherry tomato relish
Serves: 2
Ingredients
For the burgers
- 300-400g beef mince
- 100g cooked brown lentils
- 1 tsp chopped fresh rosemary
- Salt and pepper
- 1 tsp dried mixed herbs
- 1 egg, beaten
For the tomato relish
- 1 onion, sliced
- 1 clove garlic, chopped
- 1 tbsp olive oil (Filipo Berrio)
- 100g cherry tomatoes, halved
- 1 tbsp brown sugar
- 1 tbsp balsamic vinegar
- Pinch chilli flakes
- ½ tsp chopped thyme
You will also need
- 2 wholemeal burger buns
- 1 tbsp Greek yogurt
- Sliced grilled vegetables (Aubergine, zucchini, peppers)
Method
Start this recipe by making the tomato relish. Fry the sliced onion and garlic with 1 tbsp olive oil till soft. Add in the cherry tomatoes, brown sugar, balsamic vinegar, chilli and thyme and mix together. Turn down the heat and cook for 10 minutes till soft. Meanwhile, make the burgers by mixing together all the ingredients well and season with salt and pepper. Divide the mixture into 2 and form into 2 patties. Heat a little oil in a pan and cook the burgers for a few minutes on each side. When ready, put together the burgers by lightly toasting the burger buns. Spread over the Greek yogurt then fill the buns with the tomato relish, burger and top up with the grilled vegetables. Place on the bun top and serve with a side salad.

- 300-400g kapuljat taċ-ċanga
- 100g għads ismar imsajjar
- 1 kuċċarina klin frisk imqatta’
- Bżar u melħ
- 1 kuċċarina ħwawar niexfa imħallta
- 1 bajda mħabbta
- 1 basla mqattgħa
- 1 sinna tewm imqattgħa
- 1 mgħarfa żejt taż-żebbuġa (Filipo Berrio)
- 100g tadam ċirasa maqsum min-nofs
- 1 mgħarfa zokkor ismar
- 1 mgħarfa ħall balsamiku
- Niskata frak tal-filfel
- ½ kuċċarina sagħtar imqatta’
- Għandek bżonn ukoll
- 2 panini somor għall-burgers
- 1 mgħarfa jogurt Grieg
- Ħaxix mixwi mqatta’ (brunġiel, qarabagħli, bżar ikkulurit)
Method
Ibda bit-taħlita tat-tadam. Qalli l-basal u t-tewm f’mgħarfa żejt taż-żebbuġa sakemm jirtabu. Żid it-tadam, iz-zokkor ismar, il-ħall balsamiku, il-filfel u s-sagħtar u ħawwad kollox. Baxxi n-nar u sajjar għal 10 minuti sakemm it-taħlita tirtab. Sadattant, agħmel il-burgers billi tħallat flimkien l-ingredjenti kollha u ħawwar bil-bżar u l-melħ. Qassam it-taħlita fi tnejn u fforma 2 burgers. Saħħan ftit żejt f’taġen u sajjarhom għal ftit minuti minn kull naħa. Meta jkunu saru, għaqqad kollox flimkien billi l-ewwel tixwi ftit il-panini. Imbagħad idlek il-qiegħ tal-panini bi ftit jogurt Grieg u imliehom bit-taħlita tat-tadam. Poġġi l-burger, u żid il-ħaxix mixwi fil-wiċċ. Għatti bl-għatu tal-panina u servi mal-insalata.
