Baked peaches with almonds and amaretto biscuits

Serves: 2

Ingredients

  • 2 peaches, halved
  • 10 amaretti biscuits, crumbled
  • 40g butter
  • 2 tbsp honey
  • 2 tbsp Marsala (optional)
  • 1 tbsp brown sugar
  • Vanilla ice-cream for serving

Method

Start by placing the 4 peach halves onto a baking tray. Melt the butter and place into a small bowl with the crushed biscuits, 1 tbsp honey and 1 tbsp Marsala. Mix together well then spoon onto the peaches. Drizzle over the remaining Marsala and sprinkle over the brown sugar. Bake in the oven at 180`c for 15-20 minutes, or until golden brown. Serve hot drizzled with the remaining tablespoon of honey and a scoop of ice-cream on the side.
