Asian grilled salmon with couscous croquettes
Ingredients
- 2 salmon fillets
- 1 tbsp sweet chili sauce
- 1 tsp grated ginger
- Juice of 1 lime
- 1 tsp soy sauce
- 1 tbsp hoisin sauce
- Fresh chili
- Fresh coriander
- 2 cloves crushed garlic
- 1 packet prepared couscous (Erin)
- 200g cottage cheese
- 1 chopped red bell pepper
- 1 finely chopped onion
- 2 cloves garlic
- Fresh coriander
- Cornflour (Lamb brand)
- Breadcrumbs (Lamb brand)
- 2 spring onions
- 2 tomatoes
- 1 clove garlic
- 1 small cucumber
- Olive oil
- Salted peanuts
- Sesame oil
Method
Prepare the marinade for the salmon. Mix together the sweet chili, soy sauce, hoisin, lime, ginger, coriander , garlic and chili. Marinade the salmon with the obtained sauce. Grill when ready to serve. For the couscous croquettes, mix the couscous with cottage cheese, bell pepper, coriander chopped onion and garlic. Mix the couscous well and mould into croquettes. Roll in the corn flour, lightly dip in water and roll in the breadcrumbs. Bake the croquettes in a hot oven until golden. Chop the tomatoes, cucumber and spring onion, mix with the peanuts, sesame oil and olive oil to make a side salad
